A simple and tasty preparation of chicken stir fry with mushroom, bok choy, and carrot coated in a flavourful sauce. Chop Suey is just a slightly westernised version of a classic, basic Chinese stir fry. Because of this, there really aren’t hard and fast rules about what goes in it, but the general characteristic is that the sauce is a fairly light brown colour, there is plenty of it and it’s pretty thick so it clings to your rice or noodles.

Ingredients for Chicken Chop Suey Stir Fry Recipe

  • 180 gram Chicken breast thinly sliced
  • 2 Garlic finely chopped cloves
  • 5 piece Bok choy cut into cm separate leaves from stems 5 to 6 stems
  • 50 gram Mushrooms thinly sliced
  • 1 No.s Small onion thinly sliced
  • 1 No.s Carrot thinly sliced
  • 100 gram Bean Sprouts
  • As required Ingredients for sauce
  • 1 tablespoon Cornflour
  • 1.50 tablespoon Light soy sauce
  • 2 teaspoon Oyster Sauce
  • 1 tablespoon Chinese cooking wine
  • 1 tablespoon Sesame oil
  • 185 milliliter Water
  • 1 pinch White Pepper

Directions: Chicken Chop Suey Stir Fry Recipe

step 1

  • STEP 1.1 for the sauce, in a small mixing bowl add 1 tbsp cornflour, 1 ½ tbsp light soy sauce, 2 tsp oyster sauce, 1 tbsp chinese cooking wine, 1 tbsp sesame oil, white pepper powder as desired,185 ml water and mix until lump-free.

  • STEP 2.2 in a wok heat 2 tbsp oil on high heat, add 1 small onion thinly sliced, 2 cloves garlic finely chopped and stir fry for 1 minute.

  • STEP 3.3 add 180 gm thinly sliced chicken breast and stir fry for 1 minute till chicken changes colour and turns white.

step 4

  • STEP 4.4 next add 5cm pieces of 5 to 6 bok choy stems, 1 medium carrot thinly sliced, 50 gm thinly sliced mushroom and stir fry for 1 minute.

step 5

  • STEP 5.5 add the chopped leaves of the 5 to 6 bok choy, 100 gm bean sprouts and stir together.

step 6

  • STEP 6.6 then pour in the prepared sauce mixture, add salt to taste and stir fry for 1 to 2 minutes until sauce thickens. Turn off the heat.

step 7

  • STEP 7.7 transfer to a dish and serve hot with rice.
