Cooking Directions

  • STEP 1.Preheat the oven to 375°F (190°C) and grease a casserole dish.
  • STEP 2.In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, garlic powder, and paprika. Cook the chicken until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.
  • STEP 3.In the same skillet, melt butter over medium heat. Add the onions and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
  • STEP 4.Add the flour to the skillet and cook for 1-2 minutes, stirring constantly. Gradually whisk in the chicken broth and milk, making sure there are no lumps. Cook until the sauce thickens, about 5 minutes. Remove from heat.
  • STEP 5.Layer half of the sliced potatoes in the greased casserole dish. Top with half of the cooked chicken, followed by half of the cheese mixture. Pour half of the sauce over the top. Repeat the layers with the remaining potatoes, chicken, cheese, and sauce.

  • STEP 7.Remove from the oven and let the casserole cool for a few minutes before serving. Garnish with chopped parsley, if desired.
  • STEP 8.Serve the Chicken and Three-Cheese Potato Casserole hot, and enjoy!
