A tasty and simple stir fry of chicken, ribbon rice noodles, egg and broccoli flavoured with soy sauce.This superfast stir-fry is overflowing with traditional Asian spices and comes together in under 20 minutes. If you don't have or can't find oyster sauce, clam juice or fish sauce will work in its place. Rice noodles are more firm and don't turn mushy after being sautéed in the pan, but feel free to use fine udon noodles instead.

Ingredients for Chicken And Rice Noodle Stir Fry Recipe

  • 200 gram Ribbon rice noodles
  • 250 gram Chicken breasts cut into thin strips
  • 200 piece Broccoli cut into bite size gm
  • 3 Garlic finely chopped cloves
  • 3 tablespoon Peanut oil
  • 1/2 teaspoon Black peppercorns coarsely ground
  • 2 Eggs whisked Nos
  • 2 tablespoon Light soy sauce
  • As required Salt

step 1

  • STEP 1.1 soak 200 gm ribbon rice noodles in warm water till soft. Strain and keep aside.

    • STEP 2.1 in a pan or wok heat 1 ½ tbsp peanut oil on high heat and add 250 gm chicken breast cut into thin strips.

    • STEP 3.2 stir fry for 3 minutes till the chicken changes colour to light golden.

    • STEP 4.3; add 3 cloves finely chopped garlic, add salt to taste ,½ tsp coarsely ground black peppercorns and stir.

    • STEP 5.4 next add 200 gm broccoli cut into bite size pieces and stir for 1 minute.

    step 7

    • STEP 6.5 add 2 tbsp light soy sauce and continue to stir.

    • STEP 7.6 then remove from the pan and keep aside.

    step 9

    • STEP 8.7 heat another 1 ½ tbsp peanut oil in the pan and add 2 whisked eggs and stir fry till cooked.

    step 10

    • STEP 9.8; add 200 gm soaked and drained ribbon rice noodles and stir together well with the egg.

    step 11

    • STEP 10.9 next return the cooked chicken and broccoli to the pan with the noodles and the egg. Toss together well and stir fry for 1 minute. Turn off the heat.

    • STEP 11.10 transfer to a dish and serve hot.
