A simple stir fry of chicken and cucumber. Cucumber Garlic Chicken is an Asian Stir Fry Dish featuring tender chicken and chunks of cucumber in a spicy garlic sauce. Serve it over Jasmine rice to complete the meal.

Ingredients for Chicken And Cucumber Stir Fry Recipe

  • 70 gram Chicken breasts cut into extremely thin slices
  • 37.50 gram Cucumber cut into thin slices
  • 1/4 No.s Spring onion finely chopped
  • 3/4 Garlic finely chopped cloves
  • 1.25 gram Ginger finely chopped
  • 1/4 teaspoon Sesame oil
  • 1/4 teaspoon Cooking wine
  • 1/2 tablespoon Cornflour
  • 10 milliliter Water
  • 1/4 No.s Egg white
  • As required Salt
  • 1/4 liter Oil

Directions: Chicken And Cucumber Stir Fry Recipe

  • STEP 1.In a large mixing bowl add 280 gm chicken breasts cut into extremely thin slices, 1 ½ tbsp cornflour, 1 tsp cooking wine,1 egg white and mix well to evenly coat the chicken. Keep aside to marinate for 10 minutes.
  • STEP 2.In a small bowl add ½ tsp cornflour and 40 ml water and stir to make a smooth mixture.
  • STEP 3.In a wok heat 1 ltr oil. When hot add the marinated chicken pieces and stir to separate the pieces.
  • STEP 4.Deep fry for 2 minutes till the chicken changes colour.
  • STEP 5.Use a slotted spoon to remove the chicken and drain of the excess oil.
  • STEP 6.In a wok heat 1 tbsp of oil on high heat and add 3 cloves of garlic finely chopped, 5 gm ginger finely chopped, 1 spring onion finely chopped and stir fry for 10 seconds till aromatic.
  • STEP 7.Then add 150 gm thinly sliced cucumber and stir fry for a few seconds.
  • STEP 8.Next add the fried chicken to the wok and stir together.
  • STEP 9.Add salt to taste and 1 tsp sesame oil and stir fry for 1 minute.
  • STEP 10. Add the cornflour and water mixture and stir well till the chicken is coated and there is no liquid in the wok.
  • STEP 11. Transfer to a serving dish.
