CHHAAK is the traditional snack, which is given, alongwith mithais, to groom's family from the bride's family in marriages in Haryana. I've chosen this recipe, cuz, it takes us back to our roots. In today's world, fancy snacks have replaced the traditional ones, devoiding us from our ancient culture. Traditionally deep-fried in a generous amount of oil, Air fryed chhaak eliminates the oil pool completely. The flaky, melt-in-mouth texture that defines good chhaak comes from the fat in the dough — not from oil absorption during frying. By shifting cooking to an air fryer, the result is a lighter chhaak that is just as crispy and belongs equally at a chai table and in a tiffin box with 'Aam Ka Achaar'.

  • 0.17 cup 👉All-purpose Flour (Maida) -
  • 0.33 tablespoons 👉Semolina (Sooji) - (for ultimate crunch)

  • 0.17 teaspoon 👉Carom Seeds (Ajwain) -
  • 0.17 teaspoon 👉Black Peppercorns - (coarsely crushed)

Directions: Chhaak (unsalted, Large Matthi) Recipe

  • STEP 1.1) Combine maida, sooji, ajwain, and crushed black pepper in a large mixing bowl. Pour in the ghee or oil. Rub the fat into the flour thoroughly using your fingertips for 2 minutes until it looks like coarse breadcrumbs.
  • STEP 2.2) Knead a very stiff, firm dough. Cover with a damp cloth. Let it rest for 20 minutes.
  • STEP 3.3) Divide the dough into large, golf-ball-sized portions. Roll each ball out into a thick disc (roughly 3.5 to 4 inches wide and ¼-inch thick).
  • STEP 4.4) Pinch the outer edges to give it the unique shape.
  • STEP 5.5) Prick both sides heavily with a fork. This step is critical; it stops them from puffing up like puris and ensures internal crispness.
  • STEP 6.6) Preheat your air fryer to 160°C (320°F) for 4 minutes. Brush both sides of the chhaaks lightly with a tiny bit of melted ghee or oil. Place them in the air fryer basket in a single layer. Do not overlap. Air fry at 160°C for 16–20 minutes. Flip them over at the 9-minute mark to ensure even browning. They are done when they turn a uniform pale golden color.
