Vegetable Lasagna is made up of layers of plenty of sauteed vegetables (onions, carrots, zucchini, broccoli and yellow squash), cheeses and a very simple creamy spinach sauce.

Ingredients for Cheesy Vegetable Lasagna Recipe

  • As required For sauce
  • 2 tablespoon Butter
  • 5 tablespoon Olive Oil
  • 1/4 cup all purpose Flour / Maida
  • 4 cup Milk
  • As required Nutmeg / Jaiphal, Freshly Grated
  • None Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Mixed Italian Herbs
  • 1 cup grated Mozzarella
  • As required For the Veggies
  • 4 Cloves Garlic, minced
  • 1 cup finely diced Onion
  • 1 cup diced carrots
  • 1 cup finely diced Zucchini
  • 1 cup Broccoli Florets
  • 1 cup Finely chopped French beans
  • 1 cup Sweet Corn kernels
  • 1 cup Red Bell Pepper and Capsicum
  • 1/2 cup Frozen Green Peas
  • 2 cup Tomato puree
  • 2 cup Chopped Spinach
  • 1.50 teaspoon Red chili Flakes
  • 1 teaspoon Black pepper powder
  • 2 teaspoon Italian Herbs
  • 3 tablespoon Tomato Ketchup
  • As required For Ricotta
  • As required Ricotta

  • 2 tablespoon Parmesan Cheese
  • 1 cup grated Mozzarella Cheese
  • 9 Sheets Lasagna Pasta

Directions: Cheesy Vegetable Lasagna Recipe

step 1

  • STEP 1. Boil some water, add salt to it and put in the lasagna sheets. let it cook for 15 minutes. Strain and lay flat on a tray.

  • STEP 1. Take 3 tomatoes and blend them up into a puree. In a bowl of ricotta add 2 tsp basil pesto and mix well

  • STEP 1.For veggies

  • STEP 1. In a pan take some olive oil, garlic, italian herbs, chili flakes and saute it for a few seconds. Now add chopped onions and saute it for 1 minute.

  • STEP 1. To this add carrots, beans, zucchini, broccoli and sweet corn. Sprinkle some salt, mix well, cover it with a lid and cook it for 5 minutes.

  • STEP 1.. Add bell pepper, tomato puree, fresh spanish and cook for 5 more minutes. to this add some salt, black pepper, chili flakes, italian herbs, tomato ketchup, frozen peas and mix well.

  • STEP 1.For sauce

  • STEP 1. In a pan take some butter, olive oil and all purpose flour. Roast it for two minutes and add milk to it.

  • STEP 1. Keep stirring the milk and cook until it gets thick. Turn off the flame and add cheese, salt, italian herbs, nutmeg and mix well, your sauce is ready.

  • STEP 1.For lasagna

  • STEP 1. Grease a baking tray with some oil and spread white cream sauce on it. Layer it with lasagna sheets, ricotta and veggie mixture.

  • STEP 1.3. Repeat the layers and top it with white cream sauce.

  • STEP 2.4. Cover the tray with aluminium foil and bake in a preheated oven at 200°c for 25 minutes.

  • STEP 1. Put some cheese on top and microwave it till the cheese melts. Cover the tray with aluminium foil and bake in a preheated oven at 200°c for 25 minutes.
