Kebabs are a rich heritage of not just the Mughals but several Turkish and Persian travellers too. The idea of grilling minced meat on a sword was common for soldiers during that time. It was then that the kebabs travelled and made their way to India. Although most kebab stories lead to the dingy lanes of Lucknow, the chapli kebabs take us to Peshawar. Yes, the Pakistani city is where these kebabs were born. Derving their name from the word Chaprikh which means flat in Pashto language, these kebabs came to be called chapli because of their appearance. Formerly referred to as Peshawari kebabs, these meat delicacies were made from meat flattened and mixed with coriander and pomegranate seeds. The kebabs were chewy in taste which made tgem stand out from the galoutis and tundays. Chapli Kebab or Kabab is a Mughlai-influenced Pashtun-style Pakistani minced kebab, usually made from ground beef and is made from chicken and mutton also today.

Ingredients for Chapli Kabab Recipe

  • 3/4 No.s Egg
  • 0.13 kilogram beef mince
  • 1 No.s chopped onions
  • 1/4 tablespoon Ginger garlic paste
  • 1/4 No.s chopped tomato
  • 1.75-2 No.s chopped green chillies
  • 1/4 tablespoon crushed red chilli
  • 0.13 tablespoon black pepper powder
  • 1/4 tablespoon Salt
  • 1/4 tablespoon Red chilli powder
  • 1/2 tablespoon crushed Coriander seeds
  • 1/4 tablespoon Cumin Powder
  • 1/4 tablespoon chopped fresh coriander leaves
  • 1/4 tablespoon Gram Flour

Steps To Prepare

  • STEP 1.You can use minced chicken or mutton too.
  • STEP 2.Chop onions, green chilies and coriander beforehand.

Cooking Directions

  • STEP 1.In a bowl, take minced beef, onions, tomatoes, spices, ginger garlic paste, coriander leaves, 1 egg, prepared omlette and gram flour.
  • STEP 2.Mix everything well with your hands.
  • STEP 3.Refrigerate this mix for 30 minutes.
  • STEP 4.Take the mixture out and give it a shape of patties with your hands.
  • STEP 5.Take some oil in a pan and fry the patties from both the sides until they turn golden brown.
  • STEP 6.Your chapli kababs are ready to be served!

Storage And Serving Method

  • STEP 1.To serve these kebabs, pair them with roomali roti or serve with onion rings, lemon slice and mint chutney.
