Chapea is a bean stew: a very popular dish from the countryside of the Dominican Republic. There are variations of this recipe but it generally includes beans and rice, shimmered into a flavourful broth. Along with squash, pepper, onions and cilantro. Now chapea is traditionally made with white rice so its added directly into the soup pot to cook along with the rest of the stew. This makes it truly one pot meal.

Ingredients for Chapea Recipe

  • 6 cup vegetable broth
  • 1 No.s medium onion, diced
  • 4 No.s cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 No.s green bell pepper, diced
  • 2 No.s large carrots, sliced
  • 1.50 cup rice, uncooked
  • 1 cup cabbage, chopped
  • 1 can cooked pinto beans, rinsed and drained
  • 1.50 cup butternut squash, diced
  • 4 tablespoon tomato paste
  • 1/2 teaspoon Sea Salt
  • 2 No.s Avocado

Directions: Chapea Recipe

step 1

  • STEP 1.1 - add vegetable broth to a pot and saute garlic, onions, bell pepper and cilantro in it.

step 2

  • STEP 2.2 - now add uncooked rice, butternut squash, cabbage, beans, tomato paste and salt.

step 3

  • STEP 3.3 - bring it to boil.

step 5

  • STEP 4.5 - serve with chopped avocados.
