A bengali authentic recipe of bottle gourd filled with mustard seeds and coconut chal kumro—which is ash gourd, called so because they were grown on roofs ("chal" in Bangla)—is stuffed with a pungent mustard and coconut filling, then dipped in a batter and fried. This is served as a side with dal, rice and a torkari (any vegetable dish), before the fish or meat course.

Ingredients for Chal Kumro'R Bora Recipe

  • 400 gram chalkumro
  • 12 gram Salt
  • 555 gram Water
  • As required FOR THE FILLING
  • 40 gram mustard seeds
  • 50 gram grated coconut
  • 4 piece green chillies
  • 22 gram Sugar
  • 15 gram mustard oil
  • 1/4 teaspoon kaalo jeere
  • As required FOR THE BATTER
  • 70 gram plain flour
  • 30 gram Semolina
  • 2 gram poppy seeds
  • 1/2 teaspoon Turmeric
  • 1/4 teaspoon red chilli powder
  • As required oil for frying

step 1

  • STEP 1.Peel and cut the bottle group into semi round halves (as shown in the video)

step 2

  • STEP 2.Cook with hot water and salt for 1min and let it cool

step 3

  • STEP 3.Paste the mustard seeds, grated coconut,green chilies,salt,sugar and water

step 4

  • STEP 4.Make a batter of flour,semolina,poppy seeds, turmeric powder, chili powder, sugar,salt , mustard oil and little water

  • STEP 5.Heat oil in a kadhai

step 6

  • STEP 6.Add mustard oil and nigella seeds

step 7

  • STEP 7.Add the paste and mix well to fry

step 8

  • STEP 8.Fry until the colour darkens

step 9

  • STEP 9.Set aside to cool

step 10

  • STEP 10.Use it as a filling for the bottle gourd

step 11

  • STEP 11.Dip the filled bottle gourd in the batter,coat well

step 12

  • STEP 12.Deep fry them in oil

step 13

  • STEP 13.Serve as a side dish to rice and dal
