Chaj is a Uruguayan cake that consists of 3 layers of sponge cake stuffed with syrup, dulce de leche and a delicious whipped cream. Chaja cake is the famous lucious and naughty cake of Uruguay. Layers of sponge cake, peaches, dulce de leche , meringue and cream make this cake the perfect treat for any celebration. Might look a little bit complicated to make but if you follow all the steps of my recipe, you’ll achieve the perfect celebration cake ever! Plus, you can use canned peaches, perfect option for winter when fresh peaches.

Ingredients for Chajá Recipe

  • As required For the genoise
  • 5 No.s Egg
  • 2 cup caster sugar
  • 1.50 cup flour , sifted
  • 2 tablespoon Butter
  • 1 tablespoon Flour
  • As required For the meringue
  • 3 No.s egg whites
  • 1.75 cup icing sugar , sifted
  • 1 pinch Salt
  • As required For The Filling
  • 900 gram peach halves in syrup
  • 2.50 cup heavy whipping cream
  • 450 gram dulce de leche

Directions: Chajá Recipe

step 1

  • STEP 1.Preheat the oven at 400 degrees. Beat the eggs in a food processor with sugar. Add the flour to the bowl and mix it at a low sped for 30 seconds.

  • STEP 1.Grease a round cake pan and sprinkle some dry flour on it. Pour the batter in the pan and bake it for 12 minutes at 400 degree F. Bake it for another 30 minutes at 350 degree F. Let it cool for 10 minutes.

  • STEP 1.Meringue - Preheat the oven at 210 degree f. Add eggs to the stand mixer, preheat the oven to 210 F/100 C.

  • STEP 1.Using a large black pen, trace a circle of the same size as the sponge pan (8 inches/20cm) on a parchment paper, turn it over and place it on a baking sheet.

  • STEP 1.Add the egg whites into the bowl of a stand mixer. Add a pinch of salt over the egg whites and beat them. when the mixture begins to foam add the castar sugar.

  • STEP 1.Once the whites are stiff and shiny, stop whipping and fold in the icing sugar delicately with a spatula, without breaking the egg whites.

  • STEP 1.Using a pastry bag and a large plain pastry tube, pipe the meringue in a circular motion, so that it fills the circle painted on the parchment paper on a single layer.

  • STEP 1.With the rest of the meringue, make some meringues discs.

  • STEP 1.After two hours of baking, increase the oven temperature to 270f/130c, and bake for another 5 minutes.

  • STEP 1.Turn off the oven and leave the meringues inside until they cool completely.

  • STEP 1.For cream- Place the heavy whipping cream in the freezer for 20 minutes. Pour the cream in a bowl of stand mixer.

step 12

  • STEP 1.Beat the whipped cream at medium speed for about 10 minutes by incorporating the icing sugar gradually.
