  • 560 gram Yukon Gold potatoes, or russet
  • 2 As required tablespoons Aji Amarillo chili paste
  • 2 tablespoon olive oil
  • 2 As required nos limes, juiced
  • NaN As required Salt
  • NaN As required Cayenne
  • As required For the chicken salad
  • 1 No.s large cooked chicken breast, diced or shredded
  • 1/4 cup green peas
  • 1/4 cup cooked diced carrots
  • 2 tablespoon finely diced roasted red pepper
  • 1 teaspoon minced shallot, or red onion
  • 2 tablespoon freshly chopped cilantro
  • 1 teaspoon Lime Juice
  • 0.33 cup mayo, or as needed
  • 1 No.s ripe avocado for layering with the salad

Directions: Causa Rellena Recipe

step 1

  • STEP 1.in a bowl take diced chicken breast, peas, diced carrots, red pepper, cilantro, onions, lime juice salt, cayenne and mayo.

step 2

  • STEP 1. mix everything well.

step 3

  • STEP 1. cover with a cling film and refrigerate.

step 4

  • STEP 1. peel and cut the potatoes in halves.

step 5

  • STEP 1.boil them in salt water on medium to high heat.

step 6

  • STEP 1. mash the potatoes and add chili paste and oil to it.

step 7

  • STEP 1. season with salt, cayenne and lime juice and mix well.

  • STEP 1. scoop this mixture out and pour into a small bowl with a cling film lining.

step 9

  • STEP 1. top it with sliced avocados, layer of chicken salad and potato mix.

step 10

  • STEP 1. cover it with cling film and refrigerate for a few hours.

step 11

  • STEP 1. take them out slowly so it maintains the shape.

step 12

  • STEP 1. serve it with your favourite sauce.
