  • 4 large garlic cloves
  • 1/4 cup chopped parsley and cilantro
  • 1 small preserved lemon
  • 2 tablespoon olive oil
  • 1 teaspoon ground paprika

How to Make Cauliflower Zaalouk Recipe

STEP 01

Try breaking the cauliflower into medium-sized or bite-sized chunks.

STEP 02

Place a large pot filled with salted water on medium heat, add the cauliflower chunks, then cover it with a lid, and cook until the cauliflower is tender enough to mash easily.

STEP 03

In the meantime, let’s prepare the rest of the ingredients. Dash and finely chop the garlic cloves, then finely chop the fresh parsley and cilantro.

STEP 04

Remove the pulp of the preserved lemon, and finely chop them too.

STEP 05

Once cauliflower is ready, drain the cauliflower from the water and place it in a large bowl. Mash the cauliflower with a wooden spoon until you get a soft yet rough mixture.

STEP 06

In a large skillet, heat some olive oil on medium heat, add the crushed garlic, and cook for 2 minutes. Now add the mashed cauliflower followed by the ground paprika, ground cumin, chopped preserved lemon pulp, finely chopped parsley, and cilantro, salt, and pepper, saute and mix them well.

STEP 07

Cook for a few minutes while stirring constantly. Taste and adjust the same spices as per your taste. Cook for around more than 10 minutes until the liquids are absorbed.

STEP 08

You can eat the cauliflower zaalouk hot or cold, and serve with crusty bread! hmm…..
