Moroccan cooked salads are just delicious! Cauliflower zaalouk is an easy Moroccan spiced salad recipe that will become your favorite! Zaalouk of cauliflower with chermoula is a cooked Moroccan salad that’s usually served chilled or at room temperature. The cauliflower may be served finely or coarsely mashed, or as small florets smothered in chermoula.

Ingredients for Cauliflower Zaalouk Recipe

  • 1 medium sized cauliflower
  • 4 large garlic cloves
  • 1/4 cup chopped parsley and cilantro
  • 1 small preserved lemon
  • 2 tablespoon olive oil
  • 1 teaspoon ground paprika
  • 1 teaspoon ground cumin
  • As required Salt and pepper

  • STEP 1.Try breaking the cauliflower into medium-sized or bite-sized chunks.

  • STEP 2.Place a large pot filled with salted water on medium heat, add the cauliflower chunks, then cover it with a lid, and cook until the cauliflower is tender enough to mash easily.

  • STEP 3.In the meantime, let’s prepare the rest of the ingredients. Dash and finely chop the garlic cloves, then finely chop the fresh parsley and cilantro.

  • STEP 4.Remove the pulp of the preserved lemon, and finely chop them too.

  • STEP 5.Once cauliflower is ready, drain the cauliflower from the water and place it in a large bowl. Mash the cauliflower with a wooden spoon until you get a soft yet rough mixture.

  • STEP 6.In a large skillet, heat some olive oil on medium heat, add the crushed garlic, and cook for 2 minutes. Now add the mashed cauliflower followed by the ground paprika, ground cumin, chopped preserved lemon pulp, finely chopped parsley, and cilantro, salt, and pepper, saute and mix them well.

  • STEP 7.Cook for a few minutes while stirring constantly. Taste and adjust the same spices as per your taste. Cook for around more than 10 minutes until the liquids are absorbed.
