  • 1/4 cup Shredded Monterey Jack Cheese
  • 1/4 cup Cooked rice, try this cilantro lime rice recipe
  • 1/4 cup Cooked pinto or black beans or try this homemade refried beans recipe
  • As required Optional add ins or toppings:sour cream, avocado or guacamole, shredded cabbage or lettuce, corn salsa, diced tomatoes or pico de gallo, hot sauce
  • 1/4 Medium head cauliflower, cut into small florets
  • 1/2 Medium bell peppers, any color, seeds removed and sliced into thin strips
  • 1/4 Medium onion, sliced into 1/2 moons
  • 3/4 tablespoon Olive oil, grape seed oil or neutral flavored oil
  • 0.19 cup Corn kernels, fresh or frozen, optional
  • 0.38 teaspoon Ancho chili powder or use our homemade chili powder, see notes
  • 0.38 teaspoon Smoked paprika
  • 1/4 teaspoon Onion powder
  • 1/4 teaspoon Garlic powder
  • 0.03 teaspoon 1/4 teaspoon cayenne pepper, depending on how spicy you want the veggies
