  • 1/4 cup Tomato Puree
  • 0.13 teaspoon Turmeric Powder
  • 1/4 teaspoon Red Chili Powder
  • 1/4 teaspoon Garam Masala
  • As required Salt To Taste
  • 0.13 cup Cashew Cream
  • 1/4 tablespoon Dried Fenugreek Leaves
  • as required Fresh Cilantro For Garnish

Cooking Directions

  • STEP 1.Preheat the oven to 425掳F (220掳C).
  • STEP 2.Toss cauliflower florets with oil, salt, and pepper, and spread them on a baking sheet.
  • STEP 3.Roast the cauliflower for 20-25 minutes until golden brown.
  • STEP 4.In a large pan, heat oil and add cumin seeds, cinnamon stick, and bay leaf.
  • STEP 5.Add chopped onions and cook until golden brown.
  • STEP 6.Add ginger-garlic paste, tomato puree, turmeric powder, red chili powder, garam masala, and salt. Cook for a few minutes.
  • STEP 7.Add cashew cream and fenugreek leaves. Mix well.
  • STEP 8.Add the roasted cauliflower florets and simmer for 10-15 minutes.
  • STEP 9.Garnish with fresh cilantro and serve hot with naan or rice.

Cooking Tips

  • To make cashew cream, soak cashews in hot water for 30 minutes, then blend until smooth.
  • You can adjust the spice level according to your preference by adding more or less red chili powder.

Storage and Serving

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a pan or microwave before serving.
