A delicious snack of hard boiled eggs wrapped in seasoned cassava (yuca) then deep fried until golden brown. Katahar curry is a traditional Guyanese stew prepared with katahar as the main ingredient is a breadnut that's a seeded variety of breadfruit. Despite the name, it's not a nut, but a fruit, but when katahar is green it's treated like a vegetable. Other ingredients include onions, garlic, hot peppers, garam masala, curry powder, oil, salt, and coconut milk. The stew is simmered until the ingredients become tender and most of the liquid has evaporated. This curry is typically served at Guyanese Hindu religious events and it's often accompanied by rice and dhal.

  • 2 No.s small Catahar
  • 2 tablespoon Curry Powder
  • 5.50 tablespoon Garam Masala
  • 5.50 tablespoon Roasted Ground Geera
  • 3 tablespoon Ground Garlic
  • 5.50 tablespoon Salt
  • 1/2 No.s Onion
  • 3 stems Scallions

step 1

  • STEP 1.Mash the boiling cassava using a potato masher. Season the mashed cassava with salt, pepper, green onion and garlic. Combine everything well and make balls out of the prepared mixture. Flatten the ball into a disk and place a hard boiled egg in the center.

step 2

  • STEP 1.Cover the egg with cassava mix. In a bowl take two eggs for the egg wash and season it with salt and pepper. Roll the ball in cassava flour and dip into the egg wash.

  • STEP 1.Heat oil in a pot and fry your cassava egg balls until they turn golden brown from all sides.
