180 gram pork shoulder, trimmed of fat and sinew, thinly sliced across the grain
1 tablespoon chilli bean sauce
1/4 cup each red and green capsicum, diced
2 No.s garlic cloves
10 milliliter Shaoxing Wine
50 milliliter chicken stock
10 milliliter light soy sauce
5 milliliter each sesame oil and chilli oil
As required For cat ear
115 gram sourdough starter
195 gram whole wheat flour
3 No.s egg yolks
8 gram vegetable oil
1 pinch Salt
Directions: Cat Ear Noodles Recipe
STEP 1.Knead all ingredients to form a smooth dough. Rest in the refrigerator overnight.
STEP 2.Roll out into 3mm thickness. Cut into smaller pieces and use the thumbs to smear them one at a time sideways forming a little curve disc. The noodles are ready for cooking
STEP 3.Heat a wok over high heat until smoking, add peanut oil, then pork, and stir-fry until the pork starts to brown (3-5 minutes).
STEP 4.Remove with a slotted spoon and set aside. Add chili bean sauce to wok, stir-fry until fragrant (30 seconds-1 minute), add capsicum and garlic and toss for 30 seconds.
STEP 5.Deglaze with Shaoxing wine, add chicken stock, soy sauce, and oils and bring quickly to the boil.
STEP 6.Add noodles and warm through, add reserved pork and simmer until sauce is reduced to a glaze. Serve immediately.
