  • STEP 1.Heat oil in a pan and add cumin seeds, mustard seeds, and curry leaves. Let them splutter.
  • STEP 2.Add chopped onions and sauté until golden brown.
  • STEP 3.Add tindora and cook until they are tender. Stir occasionally.
  • STEP 4.Add cashews, turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  • STEP 5.Cover the pan and cook for 5-7 minutes until the flavors are well combined.
  • STEP 6.Garnish with fresh coriander leaves and serve hot with roti or rice.
