Inspired by Paneer Shanghai from a restaurant which was more towards a cashew paneer fritter, here is Cashew Paneer Fritters which is loaded with awesomeness.
STEP 1.We will start by grinding up the elements which need to be a blend- so start by taking ½ cup cashews, 2tbsp cornmeal, ⅓ cup besan, 4-5 curry leaves, 1 green chili, a small piece of ginger, and 5-6 garlic cloves
STEP 2.Cover it with the lid and give it a good blend.
STEP 3.After the cashew nuts are mostly ground we are going to add 1 onion(roughly diced) and ⅓ cup water
STEP 4.And grind them again until a smooth paste.
STEP 5.Take out the paste in a container add 1tsp sugar, 2tbsp red chili powder, ½ tsp garam masala, 2tbsp sesame seeds, and salt to taste
STEP 6.Mix all the ingredients well there shouldn’t be lumps.
STEP 7.Now we will add some coriander to it(optional and mix it).
STEP 8.If you think your batter isn’t thick enough then add 2 tablespoons of besan.
STEP 9.Our batter is ready now we will add the paneer chunks to the batter and give it a good coat.
STEP 10.Keep it aside. Meanwhile
STEP 11.Take a pan to add the right amount of oil and heat it at a high flame
STEP 12.Once the oil is hot start adding the paneer chunks.
STEP 13.As soon as they puff up, give them a good stir and fry them until golden.
STEP 14.This won’t take long; it will take approximately 3 to 4 minutes.
STEP 15.Take them out in a kitchen napkin to soak the extra oil and you can enjoy it with ketchup or any chutney
