  • 1/2 cup Plain greek yogurt, preferably full fat
  • 1/4 cup Cold water
  • 1/2 tablespoon Fresh juice from 1 lime
  • As required Fine sea salt or kosher salt
  • 1/4 teaspoon Freshly ground black pepper
  • 1/2 Large carrot, peeled and finely grated
  • 1 Small shallots, minced, see note
  • 1/2 teaspoon Peeled, grated fresh ginger
  • 1/2 Serrano, indian, thai, or other small hot green chili, stemmed and finely minced
  • As required For the tadka
  • 1 tablespoon Mustard oil or neutral tasting oil, like grapeseed or canola
  • 1/2 teaspoon Black or brown mustard seeds
  • 1/2 teaspoon Caraway seeds
  • 1/2 teaspoon Kashmiri red chili powder or 3/4 teaspoon smoked sweet paprika
