Gajar ka halwa for me is also about nostalgia. The recipe we use has been in the family for quite some time. I don’t remember a single winter where we didn’t have a bowl full of gajar ka halwa in the fridge. The excitement that took over when I saw my mother buying carrots in bulk from the vegetable market is incomparable. You can’t buy happiness, but you can buy pineapple custard and that’s kind of the same thing, The perfect custard is like music that makes my taste buds dance.

Ingredients for Carrot halwa with pineapple custard Recipe

  • 1/4 kg Carrot
  • 1/4 Litre Milk
  • 62.50 g Khoya
  • As Required For Ganishing Dry fruits
  • 1/2 tbsp Ghee
  • 1/4 cup Sugar
  • 3/4 tbsp Pineapple custard
  • 1/4 Litre Milk
  • 3/4 tbsp Sugar

Directions: Carrot Halwa With Pineapple Custard Recipe

  • STEP 1.Cook 2 Kg grated carrot in 2 tsp ghee for 10 mins.
  • STEP 2.Then add 1 ltr milk to it and cook again until it soaked all the milk and becomes thick consistency and dry.
  • STEP 3.Then add 1 cup sugar or according to taste. Cook until the sugar is completely dissolved.
  • STEP 4.Add 250 gms of khoya and cook for 10 more mins. Add dry fruits of your choice.
  • STEP 5.For Pineapple Custard:
  • STEP 6.Boil 1 ltr of milk
  • STEP 7.Dissolve 3 tsp pineapple custard in water and add slowly slowly it to the milk to avoid the lumps .
  • STEP 8.Add 3 tsp of sugar and some rose petals to it.
  • STEP 9.Then after it ready, serve the carrot halwa with pineapple custard.
  • STEP 10.This is just an awesome combo.
