  • STEP 1.Preheat the oven to 400°F (200°C).
  • STEP 2.Place the carrots and red bell peppers on a baking sheet. Drizzle with olive oil and sprinkle with cumin, salt, and pepper.
  • STEP 3.Roast in the oven for 25-30 minutes, or until the vegetables are tender and slightly charred.
