Ingredients for Carrot Capsicum Poriyal Recipe

  • 4 No.s Carrots large chopped small
  • 2 tablespoon Water
  • NaN As required Salt
  • 1 tablespoon Oil
  • 1/2 teaspoon Mustard seeds
  • 1/2 teaspoon Cumin seeds
  • 1/2 teaspoon Split white urad dal
  • 1/4 teaspoon Asafoetida
  • 1 sprig Curry leaves roughly chopped
  • 2 Green chillies slit
  • 2 No.s Capsicum finely chopped
  • 1/4 cup Coconut fresh grated

Directions: Carrot Capsicum Poriyal Recipe

step 1

  • STEP 1.In a pressure cook place 4 large carrots chopped small, add 2 tbsp of water, salt to taste and pressure cook for 2 whistles. Release pressure immediately.

step 2

  • STEP 1.In a preheated pan, add 1 tbsp oil, ⅓ tsp mustard seeds, ½ tsp cumin seeds and ½ tsp urad dal. Allow the seeds to crackle and the dal to turn golden brown.

step 3

  • STEP 1.Then add ¼ tsp asafoetida, 1 sprig curry leaves roughly chopped and 2 slit green chillies. Stir for a few seconds. add 2 capsicum finely chopped and salt to taste. Saute until capsicum is cooked.

step 4

  • STEP 1.Add the cooked carrots and stir on high heat for 1 minute. Add ¼ cup fresh grated coconut and stir well to combine the vegetables and coconut. Turn off the heat.
