How to Make Carrot Capsicum Poriyal Recipe

step 1

STEP 01

In a pressure cook place 4 large carrots chopped small, add 2 tbsp of water, salt to taste and pressure cook for 2 whistles. Release pressure immediately.

STEP 01

In a preheated pan, add 1 tbsp oil, ⅓ tsp mustard seeds, ½ tsp cumin seeds and ½ tsp urad dal. Allow the seeds to crackle and the dal to turn golden brown.

STEP 01

Then add ¼ tsp asafoetida, 1 sprig curry leaves roughly chopped and 2 slit green chillies. Stir for a few seconds. add 2 capsicum finely chopped and salt to taste. Saute until capsicum is cooked.

STEP 01

Add the cooked carrots and stir on high heat for 1 minute. Add ¼ cup fresh grated coconut and stir well to combine the vegetables and coconut. Turn off the heat.
