A simple and effective dry curry recipe made with finely chopped carrots, beans and coconut. it is an ideal south indian side dish for dal rice or rasam rice combination or even for chapati. the recipe can be prepared with no onion no garlic recipe and made as satvik style which can be served for any festival and celebration feast.

Ingredients for Carrot Beans Thoran Recipe

  • 2 tablespoon Coconut oil
  • 1/2 teaspoon Mustard seeds
  • 2 tablespoon Chopped shallots
  • 2 No.s Whole red chilli
  • As required Curry leaves
  • 1/2 cup Grated coconut
  • 2 No.s Green chilli
  • 4 No.s Shallots
  • 1/4 teaspoon Turmeric powder
  • 1/4 teaspoon Cumin seeds
  • 1 Chopped carrot up
  • 1 cup Chopped beans
  • 1 pinch Salt

Directions: Carrot Beans Thoran Recipe

step 1

  • STEP 1.In a peat pour 2 tbsp of coconut oil and heat it.

step 2

  • STEP 1.Allow to splutter ½ tsp mustard seeds. Add 2 tbsp chopped chilli, 2 whole red chilli and a few curry leaves. Saute till the shallots turn brown.

  • STEP 1.To prepare the coconut gravy add ½ cup of grated coconut, 2 green chilli, 4 shallots, ¼ tsp turmeric powder and ¼ tsp of cumin seeds into a grinder and blend well.

  • STEP 1.Transfer the coconut gravy into the pan and saute well.

  • STEP 1.Add 1 cup each of chopped carrot and chopped beans.

step 6

  • STEP 1.Add a pinch of salt and 2 tbsp of water. Mix the ingredients well.

  • STEP 1.Cover the vessel with a lid and cook on a medium heat for 8-10 minutes.

step 8

  • STEP 1.Stir fry for 2 minutes until the water vaporizes.
