A healthy version of carrot (gajjar). Badam (almond) kheer sweetened with dates. Carrot Badam Kheer is a delicious milk pudding that can be had either warm or cold. The addition of milk, carrots and dates makes this kheer very nutritious and wholesome too. It is extremely simple to make, and with no added sugars, it is delicious and healthy too. Make it for a festive occasion or even for a nutritious treat post a weekend meal.

Ingredients for Carrot Badam Kheer Recipe

  • 2 cup Methi / fenugreek leaves roughly chopped
  • 1 No.s Drumstick quartered
  • 10 No.s Baby onions quartered
  • 1 No.s Tomato quarters
  • 2 tablespoon Sambar powder
  • 1/2 teaspoon Turmeric powder
  • 1 cup tamarind water
  • As required Ingredients for Tempering
  • 1 teaspoon Gingelly oil
  • 1 teaspoon Mustard seeds
  • 1/4 teaspoon Asafoetida
  • 1 sprig Curry leaf
  • 2 No.s Dry red chilli

Directions: Carrot Badam Kheer Recipe

Cooking Directions

  • STEP 1.In a blender add 3 carrots peeled and diced, ½ cup blanched almonds, 5 pitted and chopped dates.
  • STEP 2.Adding a little milk at a time blend the ingredients to a smooth puree.
  • STEP 3.To make the pheer transfer the carrot almond smoothie to a pan and bring it to a brisk boil for a few minutes. Serve as kheer.
  • STEP 4.Alternatively, the smooth puree can be served as a smoothie in a glass with ice cubes.
