The other day i was telling all of you about my unfortunate tendency to be a lazy breakfast maker. At my worst, i'm liable to eat cereal directly from the box without bothering to get a bowl or even pour milk on top. Usually, though, i can at least muster up the energy to put together a proper cereal bowl or at least get some buttered toast onto a plate. That's still pretty sad, though. But i get into periodic moods where i resolve to do better and it so happens that i'm deep in doing better mode at the moment. It may not last. Um ok, chances are actually very high that it won't last. But i'm enjoying it for now and the lovely thing about this particular breakfast option is that it doubles as great afternoon snack and possibly even a dessert. Last year i was doing some cooking demonstrations at my local farmer's market and the market manager asked me if i could come up with something that would be healthy but still appeal to kids. At the time they were doing cabbage recipes and it wasn't exactly a huge hit with the younger members of the public. Ok, challenge accepted. I raided the vendor's stalls and grabbed crisp apples, local honey, fresh butter, sharp cheese, spices and a loaf of whole grain bread. What i created was an apple pie style filling where the apples were sauteed in butter, honey and spices, topped with some shredded sharp cheese and served with toasted bread instead of a pie crust. The kids gobbled it up and so did the adults. And the filling itself became a go-to recipe for me in lots of different applications. It makes a great breakfast when swirled into thick, protein rich greek yogurt. And it's pretty amazing when spooned over vanilla ice cream although that might not be the healthiest breakfast option. Either way, it's terrific. Enjoy
