#rice Caramel kheer is a very delicious dessert which can enhance your taste buds. It is normal rice kheer but only the difference is that I have used caramel syrup instead of plain sugar as sweetener.

Ingredients for Caramel Kheer Recipe

  • 1/10 cup Basmati rice
  • 0.80 cups Milk
  • 0.15 cup Sugar
  • 1/5 tsp Cardamom powder
  • 1.60 Pieces Almonds chopped
  • 1.60 Pieces Cashews
  • 0.40 tbsp Pistachios
  • 1/5 tbsp Ghee
  • 1/5 tbsp Milk powder

Directions: Caramel Kheer Recipe

  • STEP 1.Coarsely grind rice in a mixer jar and wash the rice.
  • STEP 2.Heat ghee in a saucepan and fry cashews and almonds, keep aside.
  • STEP 3.Add sugar in remaining ghee and start heating the pan at medium flame slowly, it starts to melt and the colour of the sugar syrup starts turning brown.
  • STEP 4.Add 1/4 cup water and let it boil, then switch off the heat.
  • STEP 5.Boil milk and add washed broken rice into that and let it cook.
  • STEP 6.Cook till it starts thicken and milk reduced into the pan at 1/3rd.
  • STEP 7.Add fried nuts, milk powder and cardamom powder.
  • STEP 8.When it thickened, turn off the heat.
  • STEP 9.Heat caramel syrup for 3-5 seconds and add the prepared caramel to the thickened kheer and give a final stir.
  • STEP 10.Mix well and garnish with nuts, serve chilled for best results.
