STEP 1. mix some flour, sugar and salt in a bowl along with butter egg yolks and white wine to knead a firm dough.

STEP 1.wrap the dough in a plastic wrap and refrigerate for a few minutes.

STEP 1.whisk ricotta in a bowl until it becomes smooth.

STEP 1. combine heavy cream with ricotta.

STEP 1.add in the chocolate chips and lemon zest.

STEP 1. refrigerate it for an hour.

STEP 1. in another bowl mix sugar cinnamon and allspice and set it aside.

STEP 1.roll the dough flat and cut small circles out of it using a glass/ bowl.

STEP 1.wrap the circles around a cannoli mould and deep fry them until they turn crisp.

STEP 1.stuff the filling into a piping bag and fill the shells.
