A healthy and delicious soup prepared from okra,Egusi,gold meat,beef tripes through a long cooking process. For the health conscious, okra is a rich source of dietary fiber, minerals, and vitamins and a low calorie vegetable. . While in other countries it is referred to as okra. Quick & healthy, oh-so-easy and yummy, Okro Soup African-style loaded with shrimp , oxtails with or without Egusi.

Ingredients for Cameroonian Egusi Okra Soup Recipe

  • 1/2 pound Okra
  • 1 cup egusi
  • 1 pound gold meat and beef tripes
  • 1 Nos kouta fish
  • 1 Nos onion
  • 1/2 cup Crayfish
  • As required Salt
  • 1 Nos hot pepper
  • 4 Nos seasoning cubes
  • As required Palm oil
  • As required Some spinach leaves

Directions: Cameroonian Egusi Okra Soup Recipe

step 1

  • STEP 1.Clean and wash meat. Wash beef tripes and cut it into bite sized pieces. Soak kouta fish in water. Grind egusi into a powder. Remove the bones from kouta fish and wash the skin. Wash and chop the okra. Blend the okra. Add some salt to egusi and mix well. Make a paste.

  • STEP 1.Crush the crayfish using the mortar. Chop spinach leaves and add meat in a pot with some water and some salt. Cover it with the lid and cook. After a couple of minutes add beef stripes into the pot and cook. Add some water and bring it to boil. Take out the cooked stripes and let the remaining meat cook.

  • STEP 1.Now add kouta fish into the pot. Take the meat out and add some water in a pot and boil it. In the pot add egusi paste and boil. In a pan add some palm oil, chopped onions and saute. Then add crayfish powder and stir it to cook well.

step 3

  • STEP 1.Now take out the egusi balls from the pot and then add the fried onion mixture in the pot. Then add some pepper, seasoning cubes, meat and beef stripes. Cook for a couple of minutes. Now add the ground okra and cook it for about 5 minutes. lastly add spinach leaves, egusi balls and cook it for a minute before serving.
