A delicious, simple mexican recipe of shrimps first seasoned with salt and pepper and then pan fried. Then cooked in chillie tomato sauce to enhance its falvour.

Remove the seeds of guajillo chilies and chile de arbol
In a stock pot, add the chilies and water.
Boil the water and turn of the heat and let the chilies sit for 5mins
Add the chilies ,tomatoes,chipotle pepper, onion, garlic and salt in a blender
Blend to make the sauce
Peel the shrimp and season with salt and pepper
Heat olive oil in a pan
Add the onions and fry well
Add the shrimp and fry for 2 mins
Add the sauce and cook for 2 mins.
Add salt to taste
Serve with rice and lime wedge
