Ingredients for Caldo De Pollo Recipe

  • 5 pound Chicken
  • 4 stick celery chopped
  • 1 onion diced
  • 4 garlic cloves finely minced
  • 2 carrots chopped
  • 4 Mexican squash or zucchini, chopped
  • 1 jalapeño finely diced
  • 2 inch ears of corn chopped into 3 s
  • 8 cup Water
  • As required Salt and pepper
  • 2 bay leaves
  • As required Juice of limes
  • As required Handful of cilantro chopped

Directions: Caldo De Pollo Recipe

  • STEP 1.In a large pot add 8 cups of water ,chicken and 2 celery sticks,½ onions ,garlic cloves ,salt and pepper. Cover it and bring it to boil
  • STEP 2.Lower the flame and sim for 1 hour. Skim the fat on the top of liquid keep the chicken and discard the other ingredients.
  • STEP 3.Set the chicken aside and let cool. Remove the chicken from the bones
  • STEP 4.In the same pot add the remaining ingredients Add salt chicken, cover and cook for 45 minutes.
