Ingredients for Cabrales Recipe

  • 4 filets Mignons
  • As required Salt
  • 3 tablespoon olive oil
  • 1/4 pound Cabrales, Valdeón, or other blue cheese, mashed with a fork
  • 3/4 cup Heavy cream

  • STEP 1.Season the filet mignons on each side with salt.

  • STEP 2.Have prepared four warm dinner plates.

  • STEP 3.In a giant cooking pan, heat the oil over high heat.

  • STEP 4.Add the filets mignons and cook for approximately one minute on all sides for rare, or longer if you favor.

  • STEP 5.Transfer the steaks to the warm plates and keep heat.

  • STEP 6.Reserve the oil and juices within the cooking pan.

  • STEP 7.Return the cooking pan to medium heat, add the cheese, and stir for two minutes, or till the cheese begins to melt and mix with the juices.

  • STEP 8.Add the cream and whisk it into the cheese.

  • STEP 9.Increase the warmth to high and cook, stirring perpetually, for two to three minutes, or till the sauce turns golden brown and thickens.

  • STEP 10.Spoon the pan sauce over the steaks and serve.
