Ingredients for Ca Nuong (Vietnamese Grilled Whole Fish) Recipe

  • As required Vietnamese Peanut Pesto
  • 2 cup roasted peanuts
  • 5 garlic cloves
  • 3 bunch Cilantro
  • 1 bunch mint, leaves picked
  • 2 bunch green onions
  • 1 cup Red Boat fish sauce
  • 1 cup dark brown sugar
  • 3 limes, juiced
  • As required Whole Grilled Fish
  • 1 whole red snapper, scaled and cleaned
  • 2 tablespoon vegetable oil
  • 1 4 red onion, shaved
  • 1 lime, halved
  • 1 2 red chili
  • 1 inch garlic chives, cut into sticks, for garnish
  • As required crushed peanuts, for garnish
  • As required salt and pepper

step 1

  • STEP 1.For the vietnamese peanut pesto place all ingredients in a blender apart from the peanuts and blend until smooth. Transfer to a kitchen appliance, add the peanuts, and pulse until peanuts are chopped but still chunky. Set it aside.

step 2

  • STEP 2.Heat grill to 400 degrees. Season the snapper on each side with salt and pepper and drizzle with oil.

  • STEP 3.Place on a hot grill, and grill evenly on each side, allowing fish to cook for 10-12 minutes or until done.

  • STEP 4.Carefully remove the fish from the grill, smear even layers of the pesto over the whole fish. Reserve extra pesto.

step 5

  • STEP 5.Place fish on a serving plate and garnish with red onions, red chiles, garlic chives, and crushed peanuts.

step 6

  • STEP 6.Serve with sliced lime wedges and enjoy. You can also have it with jasmine rice.
