Ingredients for Broccoli Spinach Soup Recipe

  • 50 gms Spinach blanched
  • 1/4 nos small Broccoli Blanched
  • 0-1/4 nos Walnuts
  • 1/4 nos Small onion roughly chopped
  • 0-1/4 nos Garlic pods chopped
  • 1/2 teaspoon Butter
  • 1/2 teaspoon all purpose flour/ maida
  • 0.13 cup Milk
  • 0.13 teaspoon black pepper powder
  • 0.13 teaspoon Oil Olive oil can be used
  • As required salt to taste
  • As required Water

Directions: Broccoli Spinach Soup Recipe

  • STEP 1.Wash Spinach and take out the stem. Blanch it in water for about 2 minutes. Keep it aside.
  • STEP 2.Remove the stem of Broccoli and wash it. Blanch it in the same water for 6-7 minutes. Keep it aside.
  • STEP 3.In a vessel or kadhai, heat oil. To this add chopped onion and garlic. Sauté for a while. Once become transparent, add in the blanched spinach and broccoli.
  • STEP 4.Cook it for a minute. Now add walnuts and cook it for another minute.
  • STEP 5.Now add water so that all the vegetables and walnuts get cooked together. Cover it and let it cook on low flame for 5 minutes.
  • STEP 6.Once cool down. Blend this using a hand blender. Make a soup kind of consistency. It should be blended smooth.
  • STEP 7.Now in another kadhai, take butter, maida and cook it for a minute. Add milk and stir it to avoid lumps. Let it come to a boil. Pour this into the blended soup.
  • STEP 8.Heat the soup again on gas and this time add salt and black pepper powder. If you like, you can even add chili flakes.
  • STEP 9.Let it boil for another 2 minutes.
  • STEP 10.Serve it hot. Garnish with roasted broccoli florets, fresh cream, and walnuts. Sprinkle some freshly grounded black pepper powder and serve.
