  • 1 No.s Chopped brinjal
  • 1 No.s Chopped Onion
  • 3 No.s Sliced green chilly
  • 1 sprig Curry leaves
  • 1/2 cup Grated coconut
  • 1/2 teaspoon Cumin Powder
  • As required Salt
  • 3 Chopped garlic pods
  • 1/2 teaspoon Mustard seeds

How to Make Brinjal Thoran Recipe

step 1

STEP 01

Soak the chopped brinjal in water for 30 minutes to remove the stain.

STEP 01

In a hot pan splutter ½ tsp of mustard seeds.

STEP 01

Add chopped onion, chopped garlic and sliced green chilly. Saute till the onion becomes pale brown and tender.

Add 1 chopped brinjal and stir cook.

STEP 01

Sprinkle a bit of water into the pan and cook covered in a medium flame for 5 minutes.

STEP 01

Then add ½ tsp chilly powder, ½ tsp cumin powder, ¼ cup of grated coconut and a pinch of salt to the pan. Mix well all the ingredients.

Cook in the vessel covered for another 5 minutes on a low flame and garnish with few curry leaves.
