An easy, quick,tasty dish prepared from brinjal.Brinjal Gothsu is a popular side dish/accompaniment for Ven Pongal / Idli / Dosa. It's a tamarind based gravy made using perfectly cooked brinjal and freshly made masala powder. It's one of the signature dish in Chidambaram where it's served along with Ven Pongal.

Ingredients for Brinjal Kosthu Recipe

  • 150 gram Shallots/onions
  • 10 tablespoon Sesame oil
  • 3 tablespoon Coriander seeds
  • 10 No.s Kashmiri red chilli
  • 1 tablespoon Toor dal
  • 1 tablespoon Urad dal
  • 1/4 tablespoon Fenugreek seeds
  • 1/4 tablespoon Cumin
  • 5 No.s Brinjal
  • 1 tablespoon Mustard and urad dal
  • 2.50 tablespoon Gram dal
  • As required Few curry leaves
  • pinch asafoetida powder
  • 2 No.s Red chilli
  • 1 cup Tamarind water
  • 1 cup Water

  • STEP 1.Slice brinjal

  • STEP 2.Soak tamarind in water

step 3

  • STEP 3.Add sesame oil in a pot & heat it.

step 4

  • STEP 4.Add coriander seeds

step 5

  • STEP 5.Now add 10 kashmiri red chilli and cook for a min.

  • STEP 6.Now add 1 tbsp oil in a pot,separately & heat it.

  • STEP 7.And add 1 tbsp toor dal,2 tbsp gram dal,¼ tbsp fenugreek & cumin seeds.

  • STEP 8.Now grind the roasted ingredients as a fine powder
  • STEP 9.Add 3 tsp sesame oil in a pot and heat it. Then add shallots, brinjal and saute for 5 mins. Grind the fried veggies to make a paste. Add 6 tsp oil in a pot and heat it.
  • STEP 10.Then add mustard , urad dal and gram dal. Now add some curry leaves and asafoetida powder. Add 2 red chili and tarmarind water. Cook for 3 mins.
  • STEP 11.Now add the grinded brinjal paste. Add 5 tsp grinded powder and saute for a min. Add 1 cup of water cook until oil separates.
