  • STEP 1.Slice the brinjal into thin rounds and soak them in water for 10 minutes.

  • STEP 3.Heat oil in a pan and add mustard seeds, curry leaves, and sliced onions.
  • STEP 4.Add the brinjal slices and cook until they are soft and tender.
