  • 1/2 teaspoon Turmeric Powder

  • 1/2 teaspoon Garam Masala
  • 1 pinch A Saffron Soaked In Tablespoons Of Warm Milk
  • 1 tablespoon Ghee
  • as required Fresh Coriander Leaves For Garnish

Cooking Directions

  • STEP 1.Heat oil in a pan and add cumin seeds, cinnamon, cardamom, and cloves. Sauté until fragrant.
  • STEP 2.Add onions, ginger, and garlic. Cook until the onions turn golden brown.
  • STEP 3.Add brinjal, turmeric powder, red chili powder, coriander powder, and garam masala. Cook until the brinjal is tender.
  • STEP 4.In a separate pot, cook basmati rice until it is 70% cooked. Drain the rice and set aside.
  • STEP 5.Layer the cooked brinjal and rice in a pot. Sprinkle saffron milk and ghee on top.
  • STEP 6.Cover the pot and cook on low heat for 15-20 minutes until the flavors meld together.
  • STEP 7.Garnish with fresh coriander leaves and serve hot with raita or a side salad.
