  • 1/4 teaspoon Mustard Seeds
  • 0.13 teaspoon Fenugreek Seeds

  • 1/4 Onion, Finely Chopped
  • 1/2 tablespoon Tamarind Pulp
  • 1/4 tablespoon Jaggery
  • 0.13 teaspoon Turmeric Powder
  • 1/4 teaspoon Red Chili Powder

  • STEP 1.Heat oil in a pan and sauté the brinjals until they turn golden brown.
  • STEP 2.In a separate pan, heat oil and add mustard seeds, fenugreek seeds, and curry leaves.
  • STEP 3.Add chopped onions and sauté until they turn translucent.
  • STEP 4.Add tamarind pulp, jaggery, turmeric powder, red chili powder, and salt. Mix well.
  • STEP 5.Add the sautéed brinjals to the pan and cook until they are tender and the flavors are well combined.
  • STEP 6.Garnish with coriander leaves and serve hot with steamed rice or roti.
