  • 1/2 cup Coconut cream
  • 1.50 Kaffir lime leaves, bruised
  • 1/4 Fresh lime

  • 1/4 kilogram Mixed fresh, raw seafood
  • As required Baby spinach, cooked rice and the reserved coriander leaves to serve

  • 1/4 bunch Roots and stalks from fresh coriander
  • 1/2 Asian shallots
  • 1/2 Whole garlic cloves
  • 3/4 centimeter Knob of fresh ginger

  • 1/4 tablespoon Palm sugar
  • 1/4 teaspoon Shrimp paste
  • 1/4 tablespoon Fish sauce
  • 1/4 Zest and juice lime
  • 1/2 teaspoon Ground coriander
  • 1/4 teaspoon Ground Cumin
  • 1/4 teaspoon Ground galangal
  • 1/4 teaspoon Ground tumeric
  • 1/4 teaspoon Heaped salt
