Cooking Directions

  • STEP 1.In a large pot, heat olive oil over medium heat. Add onions, garlic, and bacon, and cook until onions are translucent and bacon is crispy.
  • STEP 2.Add the smoked sausage and cook for a few minutes until it starts to brown.
  • STEP 3.Add the black beans, chicken broth, bay leaves, cumin, and paprika. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the beans are tender.
  • STEP 4.Remove the bay leaves and use an immersion blender to partially puree the soup, leaving some beans whole for texture.
  • STEP 5.Season with salt and pepper to taste. Serve hot with rice, collard greens, and orange slices.
