Whole mackerel slow cooked in a flavorful tomato gravy.This soup is made by roasting sweet ripe tomatoes with garlic, thyme and olive oil. The resulting purée is incredibly delicious and can be bottled for the colder winter months

Ingredients for Braised Mackerel And Tomato Recipe

  • 800 gram Mackerel
  • 350 gram Tomato
  • 40 gram Tomato puree
  • 1 No.s Star anise
  • 10 gram Ginger
  • 3 No.s Garlic Cloves
  • 1 No.s Spring onion
  • 20 gram Sugar
  • 2 tablespoon Light soy sauce
  • 10 milliliter Rice Wine
  • As required Salt

Directions: Braised Mackerel And Tomato Recipe

step 1

  • STEP 1.1 remove the skin from 350 gm blanched tomatoes and finely dice them.

step 2

  • STEP 2.2 in a frying pan heat 4 tbsp oil on medium heat, place 800 gm washed and cleaned mackerels in the hot oil and fry on each side for 2 to 3 minutes or until light brown. Remove the fish from the pan and keep aside.

step 3

  • STEP 3.3 in a wok heat 2 tbsp oil, add 10 gm finely chopped ginger ,3 cloves finely chopped garlic ,1 finely chopped spring onion, 1 star anise and fry for a few seconds.

  • STEP 4.4 then add the diced tomatoes , 2 tbsp light soy sauce and fry for 2 minutes.

  • STEP 5.5 add 40 gm tomato puree, 10 ml rice wine ,20 gm sugar, salt to taste and stir well.

step 6

  • STEP 6.6 place the mackerel in the pan and add water to just cover the fish. Cover the wok and cook on medium heat for 1 to 1 ½ hours. Gently stir occasionally to prevent it from sticking to the pan.

step 7

  • STEP 7.7 then remove the lid , turn the heat to high and continue cooking till the liquid is reduced. Turn off the heat.

step 8

  • STEP 8.8 transfer to a dish, garnish and serve hot.
