  • 3/4-1 Shallots halved
  • 1 Cloves garlic smashed
  • 1.25 Plum tomatoes seeded and diced
  • 1/2-3/4 sprig Fresh thyme
  • 0.13 cup White wine
  • 1/2 cup Veal stock
  • 3/4 cup Chicken stock enough to cover the lamb
  • As required Salt to season the shanks plus
  • As required Pepper to season the shanks
  • 3/4-1 tablespoon Olive oil
