Directions: Oven Braised Beef Short Ribs With Cabbage Recipe

Cooking Directions

  • STEP 1.Preheat the oven to 325°F (163°C).
  • STEP 2.Season the beef short ribs with salt and pepper.
  • STEP 3.Heat a large oven-safe pot or Dutch oven over medium-high heat. Add the vegetable oil and sear the short ribs on all sides until browned.
  • STEP 4.Remove the short ribs from the pot and set aside. Add the onions, carrots, and garlic to the pot and cook until softened.
  • STEP 5.Add the tomato paste and cook for another minute.
  • STEP 6.Pour in the red wine and beef broth, scraping the bottom of the pot to release any browned bits.
  • STEP 7.Return the short ribs to the pot and add the thyme and bay leaves. Bring the liquid to a simmer.
  • STEP 8.Cover the pot and transfer it to the preheated oven. Braise for 2.5 to 3 hours, or until the short ribs are tender.
  • STEP 9.While the short ribs are braising, prepare the cabbage. Remove the tough outer leaves and core, then thinly slice the cabbage.
  • STEP 10.In a separate large skillet, heat the butter over medium heat. Add the cabbage and cook until wilted and slightly caramelized, about 10 minutes.
  • STEP 11.Season the cabbage with salt and pepper to taste.
  • STEP 12.Once the short ribs are done, remove them from the pot and strain the braising liquid. Skim off any excess fat.
  • STEP 13.Serve the short ribs over a bed of the caramelized cabbage, drizzling some of the braising liquid over the top.
  • STEP 14.Garnish with fresh parsley, if desired, and serve hot.

Cooking Tips

  • Searing the short ribs before braising adds extra flavor and helps to develop a rich, caramelized crust.
  • Make sure to use an oven-safe pot or Dutch oven that can withstand high heat and be transferred to the oven.
  • Straining the braising liquid helps to remove any impurities and creates a smooth sauce for serving.

Storage and Serving

  • Leftover braised beef short ribs can be stored in an airtight container in the refrigerator for up to 3 days.
  • To reheat, place the ribs and braising liquid in a pot and gently warm over low heat until heated through.
  • Serve the ribs and cabbage with mashed potatoes or crusty bread for a complete and satisfying meal.
