STEP 1.Heat 3 tbsp of oil in a wok over medium heat, add the ginger, and cook for about 30 seconds. Turn down the heat and add rock sugar, allow it to dissolve completely.
STEP 2.Add bamboo and turn up the heat and stir and mix. Cook until edges of the bamboo start to brown slightly.
STEP 3.Now add shaoxing wine, light soy sauce, dark soy sauce and water. Stir to combine.
STEP 4.Cook for about 10 minutes. Make sure fo reduce the liquid and add drops of oil before plating.
STEP 5.Serve it with some wine.
