  • 0.33 cup Yogurt
  • 0.67 tablespoon Chopped Mint Leaves
  • 0.67 tablespoon Chopped Coriander Leaves
  • 0.17 teaspoon Cumin Powder

Directions: Bottle Gourd Rayta/raita Recipe

Cooking Directions

  • STEP 1.Peel and grate the bottle gourd. Squeeze out the excess water and set it aside.
  • STEP 2.In a bowl, whisk the yogurt until smooth. Add the grated bottle gourd, chopped mint leaves, chopped coriander leaves, cumin powder, salt, and black pepper. Mix well.
  • STEP 3.Heat oil in a small pan and add mustard seeds. Once they start to splutter, add curry leaves and green chili. Fry for a few seconds and then pour this tempering over the yogurt mixture. Mix well.
  • STEP 4.Refrigerate the rayta for at least 30 minutes before serving to allow the flavors to blend.
  • STEP 5.Serve the bottle gourd rayta chilled as a side dish with biryani, pulao, or any Indian meal.

  • Make sure to squeeze out the excess water from the grated bottle gourd to prevent the rayta from becoming watery.
