Cooking Directions

  • STEP 1.Grate the bottle gourd and squeeze out the excess water.
  • STEP 2.In a bowl, mix the grated bottle gourd, besan, ginger-garlic paste, red chili powder, garam masala, and salt.
  • STEP 3.Shape the mixture into small round koftas and deep-fry them until golden brown.
  • STEP 4.In a separate pan, heat oil and add cumin seeds, chopped onions, and green chilies. Saute until the onions turn golden brown.
  • STEP 5.Add ginger-garlic paste and cook until the raw smell disappears.
  • STEP 6.Add tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Cook until the oil separates from the masala.
  • STEP 7.Add water and bring the gravy to a boil. Simmer for a few minutes.
  • STEP 8.Gently add the fried koftas to the gravy and simmer for another 5-7 minutes.
  • STEP 9.Garnish with fresh coriander leaves and serve hot with roti or rice.

Cooking Tips

  • Make sure to squeeze out the excess water from the grated bottle gourd to prevent the koftas from becoming soggy.
  • You can add a pinch of baking soda to the kofta mixture to make them extra soft and fluffy.
  • For a healthier version, you can also bake the koftas instead of deep-frying them.
