  • 3-3.50 Small waxy potatoes, peeled around the size of golf balls
  • 1/4 teaspoon Turmeric
  • 1 teaspoon Salt
  • 1/2 teaspoon Indian restaurant spice mix recipe link below
  • 1/4 teaspoon Cumin powder
  • 1/4 teaspoon Coriander powder
  • 1/4 teaspoon Kashmiri chili powder or more to taste
  • 1/4 teaspoon Kasoor methi dried fenugreek leaves
  • 1/4 teaspoon Kosher salt or 1/3 table salt
  • 1.50 tablespoon Neutral vegetable oil
  • As required The cooked potatoes
  • 1.50-2 tablespoon Onion sliced about 1/8 inch thick
  • 1/2 teaspoon Mustard seeds
  • 1 teaspoon Garlic ginger paste recipe link in notes
  • 1/4 tablespoon Tomato paste diluted with 1 water
  • 5 ounce Curry base recipe link in notes
  • 1/4 teaspoon Amchoor powder or the juice of 1/6 lemon
