Cooking Directions

  • STEP 1.Start by washing and cutting the blue brinjals into small pieces.
  • STEP 2.Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Let them splutter.
  • STEP 3.Add chopped onions and sauté until they turn golden brown.
  • STEP 4.Next, add ginger-garlic paste and sauté for a minute.
  • STEP 5.Add chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes are soft and mushy.
  • STEP 6.Now, add the chopped brinjals and mix well with the masala.
  • STEP 7.Cover the pan and cook on low heat until the brinjals are tender.
  • STEP 8.Finally, garnish with fresh coriander leaves and serve hot with rice or roti.
