Cooking Directions

  • STEP 1.Preheat the oven to 400°F (200°C).
  • STEP 2.In a small bowl, combine the blackening seasoning, salt, and pepper. Rub the steak with the seasoning mixture.
  • STEP 3.Heat a skillet over high heat and add the olive oil. Sear the steak for 2-3 minutes on each side, or until it reaches your desired level of doneness. Remove from the skillet and let it rest for a few minutes before slicing into thin strips.
  • STEP 4.Spread the tortilla chips on a baking sheet and sprinkle with half of the blue cheese. Top with the sliced steak and remaining blue cheese.
  • STEP 5.Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.
  • STEP 6.Meanwhile, prepare the pickled onions by combining the sliced onions, vinegar, sugar, and salt in a small bowl. Let them sit for at least 10 minutes.
  • STEP 7.Remove the nachos from the oven and top with the pickled onions and fresh cilantro.
  • STEP 8.Serve immediately with sour cream and guacamole.

Cooking Tips

  • For a spicier kick, add some sliced jalapenos to the nachos before baking.
  • You can use any cut of steak you prefer, such as ribeye or strip steak.
  • Make sure to let the steak rest before slicing to allow the juices to redistribute.

Storage and Serving

  • These nachos are best served immediately while the cheese is still melted and gooey.
  • If you have leftovers, store the components separately in airtight containers in the refrigerator.
  • To reheat, place the tortilla chips and steak in the oven at 350°F (175°C) until warmed through. Top with the pickled onions and fresh cilantro before serving.
