Bitterless Bitter Gourd Curry Recipe

A spicy bitterless quick delicious gravy eaten with rice.This Bitter Gourd Curry also known as Karela Sabji (in Hindi) is a simple, easy Punjabi recipe. Bitter gourd cubes with lightly caramelized onions, dry mango powder and a few spices make this dish sweet, tangy and bitter in taste.

Ingredients for Bitterless Bitter Gourd Curry Recipe

  • 2 Bitter gourd
  • 2 Tomato
  • 6 tablespoon Sesame oil
  • 1 tablespoon Mustard
  • 3/4 tablespoon Urad dal
  • 1/4 tablespoon Fenugreek seeds
  • 150 gram Shallots
  • 1 teaspoon Turmeric powder
  • 2 tablespoon Curry chilli powder
  • 1/4 tablespoon Red chilli powder
  • 1 tablespoon Rock salt
  • 1 Tamarind
  • 1 tablespoon Jaggery powder

  • STEP 1.Cut and remove seeds from bitter gourd.

  • STEP 2.Soak in water

step 3

  • STEP 3.Cut the tomato into small pieces.

step 4

  • STEP 4.Soak tamarind in 150 ml water

step 6

  • STEP 5.1.add 6 tbsp sesame oil and heat it.

step 7

  • STEP 6.2.add sliced bitter gourd and fry it for 5 mins on medium flame.

  • STEP 7.3.using that same oil add mustard,urad dal, fenugreek seeds,and shallots.

  • STEP 8.4.cook for 3 mins.

  • STEP 9.5.add garlic cloves and curry leaves and cook for 2 mins.

step 11

  • STEP 10.6.then add sliced tomatoes and cook for 2 mins.

  • STEP 11.7.now add fried bitter gourd

step 13

  • STEP 12.8.add the spices-turmeric powder,curry chilli powder,red chilli powder and rock salt.

  • STEP 13.9.add tamarind water and cook for 10 mins on medium flame.

  • STEP 14.10.now add jaggery powder and cook for a min.
